Chief Steward / Steward
A steward serves as the ship’s chief steward, and the duties include training and instructing the galley staff. As the head of the galley, he or she plans menus and recipes and is responsible for the procurement of raw materials and equipment for the vessel. He or she also plans and supervises the smooth operation of the galley work. On large vessels, the duties are mainly focused on planning, procurement, and supervisory tasks, in which case the cook-steward is referred to as the chief steward.
Education
A vocational qualification in food services completed at institutions specializing in maritime catering (Rauma, Kotka, Mariehamn), or a vocational qualification in food services completed through an apprenticeship. Supervisory roles are supported by a chief steward study programme completed at institutions specializing in ship catering, or by advanced supervisory studies completed at hotel and restaurant schools. In addition, safety training required in the maritime sector is mandatory.
